Baking sourdough is easy
You'll need...

Cast iron dish (or "gietijzer")

Baking paper
-
Sharp knife
-
Oven mitts

Preheat

Place the cast iron dish with the lid in the oven.​

Preheat to 250°C. 230°C is fine as well, just preheat well.

Leave the dish in the oven for 20-30 minutes until really hot.

Prep dough

Take the cold dough out of the fridge.

Dust the top with flour.

Use baking paper to transfer the dough out of the basket.

Score the top of the dough with a sharp knife (a simple lengthwise cut works well).

Bake

Carefully remove the hot dish from the oven.

Use the baking paper to place the dough in the dish.
-
Put the lid on and bake for 15 min to trap steam.

After 15 min, take the dish out of the oven to remove the lid (careful, it’s hot!) and lower the temperature to 230°C.

Bake for another 15 min or until the crust looks just the way you like it.

Cool

Remove the bread from the oven and let it cool on a rack or on top of two wooden spatulas.

It's best to let the bread cool for at least 1 hour before slicing to help the structure set and flavours to develop.
