Baking sourdough is easy 

You'll need...

​

  • Cast iron dish (or "gietijzer")

  • Baking paper

  • Sharp knife

  • Oven mitts

Preheat

​

 

  • Place the cast iron dish with the lid in the oven.​

  • Preheat to 250°C. 230°C is fine as well, just preheat well.

  • Leave the dish in the oven for 20-30 minutes until really hot.

Prep dough

​

 

  • Take the cold dough out of the fridge.

  • Dust the top with flour.

  • Use baking paper to transfer the dough out of the basket.

  • Score the top of the dough with a sharp knife (a simple lengthwise cut works well).

Bake

​

 

  • Carefully remove the hot dish from the oven.

  • Use the baking paper to place the dough in the dish.

  • Put the lid on and bake for 15 min to trap steam.

  • After 15 min, take the dish out of the oven to remove the lid (careful, it’s hot!) and lower the temperature to 230°C. 

  • Bake for another 15 min or until the crust looks just the way you like it.

Cool 

​

 

  • Remove the bread from the oven and let it cool on a rack or on top of two wooden spatulas.

  • It's best to let the bread cool for at least 1 hour before slicing to help the structure set and flavours to develop.
