Baking sourdough is easy
You'll need...
-
Cast iron dish (or "gietijzer")
-
Baking paper
-
Sharp knife
-
Oven mitts
No cast iron dish?
Check out our video on how to bake using a regular oven tray.

1
Preheat
-
Place the cast iron dish with the lid in the oven.
-
Preheat to 250°C. 230°C is fine as well, just preheat well.
-
Leave the dish in the oven for 20-30 minutes until really hot.

2
Prep dough
-
Take the cold dough out of the fridge.
-
Dust the top with flour.
-
Use baking paper to transfer the dough out of the basket.
-
Score the top of the dough with a sharp knife (a simple lengthwise cut works well).

3
Bake
-
Carefully remove the hot dish from the oven.
-
Use the baking paper to place the dough in the dish.
-
Put the lid on and bake for 15 min to trap steam.
-
After 15 min, take the dish out of the oven to remove the lid (careful, it’s hot!) and lower the temperature to 230°C.
-
Bake for another 15 min or until the crust looks just the way you like it.

4
Cool
-
Remove the bread from the oven and let it cool on a rack or on top of two wooden spatulas.
-
It's best to let the bread cool for at least 1 hour before slicing to help the structure set and flavours to develop.
“It was very easy to follow
the instructions. The shape was perfect and the taste amazing”

MEET JOANNA
I always loved the taste of sourdough and I wanted to offer healthy bread to my family and friends. When I realised there wasn't a local bakery to satisfy my Saturday morning cravings, I decided to teach myself how to bake it. What started as a personal journey quickly became a cherished ritual—a way to slow down and find a quiet moment in a busy life. I recognised that others might appreciate this too. That’s when the idea for this business was born.
With three ingredients—flour, water, and salt—WE DOO DE DO craft our sourdough using organic flour from local mills in and around Amsterdam. We know that baking bread takes time, so we handle the preparation, leaving it to you to enjoy the most rewarding part, baking it.
Our mission is to inspire as many people as possible, even in the busiest of lives, to make this a weekend ritual—something to look forward to and savour. Whether it’s the feel of the dough in your hands or the smell of fresh bread in your kitchen, we’re here to help you make your weekend more weekend.
